It's National Pie Day!


Some of us from Tammy's blog The Pink Magnolia got together and decided to post recipes celebrating this illustrious day. I am sorely afraid that pies are becoming extinct, so I am happy to take part in this delicious celebration!

This pie I am showing you today is Cracker Pie. It is one of those inventions that happen in times of great necessity.



Roll Call:

24 crackers, saltines or Ritz (who knows, Goldfish crackers might be good, too!)
3 egg whites, room temp and beaten until firm peaks stand
1 t vanilla
1 t baking powder
1 c packed brown sugar or 1 c white sugar
1 c pecans, chopped

Beat the egg whites until firm peaks show. Add in sugar and beat until sugar grains don't show. Add the vanilla and the baking powder and beat some more. Then fold in the crackers and the pecans.



Turn into a grease pie pan. It is important to use a pie pan that you like. That way, even if the pie is disgusting, it is pretty to look at. Bake at 325 for 25 minutes. Sprinkle with chocolate chips if desired.

  3. I recall my grandmother Nancy Douglas making this pie. She called it mockapple pie...we loved it, but why she didn't just go ahead and make an apple pie from the big apples on the tree outside the back door, don't know!!!

  4. Hey, Terri, I don't make many pies either. This one looks pretty good, but we are keeping all sweets out of the house for now.

    I have the same bamboo plate holder you do. Found mine last year at a yardsale!

    Sounds delicious. Wish I would have known about today. I'm always baking pies. My husband has a huge sweet tooth. I would have made one for the special occasion. I did bake though. I made chocolate chip-Heath bar cookies. Missed you!

    Yummy! I made a cookie this Christmas made from saltines and brown sugar - it was so good. So I can just imagine how wonderful this pie would taste!

  29. Oh, Terri...my kitchen doesn't come CLOSE to any of these pretty things! We live in a 50+ year old house and it is a plain, vanilla, tract house. I am always looking for ways to improve the appearance and make it have personality. I'll send you a pic of my kitchen....
