Vegetable Soup


Pat from Back Porch Musings posted on Sunday that she made a big batch of vegetable soup. It sounded so good to me that I put down the computer and made some for myself! Bob had already planned dinner for Sunday night, so I saved it for Monday, when Bob had a dinner meeting. So, on this cold, wet, foggy last-day-of-summer day, I had a fabulous vegetable soup.

Pat said that she uses what she had, so here is the recipe I came up with using what I already had....

2 carrots, sliced
1/2 c sliced mushrooms
1/2 onion, chopped
2 cloves garlic, minced
1 can petite diced tomatoes
1 can green beans
1 can kidney beans
2 cans beef broth
2 basil leaves rolled and cut into thin slices
1 twig of thyme

Saute the onions, carrots, mushrooms and garlic in enough olive oil to brown the vegetables. Add the rest of the ingredients and let simmer on the stove a couple of hours. Cool, refrigerate and eat the next day!! Serve with garlic toast.

  3. Hi Terri! Sweetie, I saw this soup over at Pat's and agree that it looks delicious, as does yours! Unfortunately our spring weather is so hot right now, that soup will have to go on the back burner for me until next year. Enjoy your Fall sweetie and have a wonderful week!

  4. Mmmmm there's something so comforting and timeless about a good ole bowl of soup! I made my homemade chicken noodle over the weekend and we've all been savoring it!

    I think next I'll have to do my veggie soup!

  6. Have to admit, I've had veggie soup on my mind too. I guess it's that time of year. I made chili for the first time this season 3 cool Friday's ago. Mom and Brent ate it up. (I'm not a chili fan, but it'll do and just seemed appropriate that day.) So, I cannot wait for veggie soup. I'm thinking maybe this weekend.

  10. I love homemade veggie soup and a few weeks ago I had made a big pot using leftover veggies from the garden and omigosh it was so good....great on a cool day:-) Hope you're feeling better, my friend, and enjoying these wonderful days of Autumn!! xoxo
