Weekly Cookbook Review

Cover of "The South Beach Diet Cookbook (...Cover via AmazonBob and I own a lot of cookbooks, in fact so many that I am certain we haven't used them enough to warrant owning them.  I read a couple of blogs where they were challenging each other to make a recipe out of a different cookbook each week.  We are also taking up the challenge.  You should visit The Single Nester and Blondie's Journal if you are interested in their reviews, too!

This week Bob decided to make Black Bean Soup from the South Beach Diet Cookbook by Arthur Agatston.  The soup uses dried beans which we haven't worked with for a while.  Bob ended up soaking them over 24 hours but it didn't seem to bother the beans any.  The soup was very good and Bob made Tastefully Simple beer bread to go with it.  It turned out yummy and was an eight point Weight Watcher meal.

The soup was served with lemon slices which sounds rather strange, but it added a bright, fresh taste to the soup.

All during lunch I kept singing "Peas porridge hot, peas porridge cold, peas porridge in the pot, nine days old."  Another reference to my school days and my love of Laura Ingalls Wilder books!

As for the review, the book is very good for those who want more recipes that feature foods lower in carbs and using more veggies.  The nutrition information is included for each recipe.  The portion sizes are wonderful and the meals we've tried are filling.

  3. I should probably do the Cookbook Challenge, as well, as I have...oh, let me see...about 4,592 cookbooks in my kitchen, give or take a few. Shhhh.... don't tell my Hubby that, tho...he'd die if he knew how many cookbooks I have!

  4. I am glad to know that there are others out there who own more cookbooks than they can use. I easily fit into that category, but since most of them come from thrift shops I don't feel too guilty.
    This challenge sounds like a great idea. I'll have to visit your links and find out more about it.
