Blueberry Muffin

Our house is a shambles.  We are getting ready for our move to Saint Charles, and we have boxes, and crates, and bundles and stacks everywhere.  In the midst of this chaos, I wanted, needed to be domestic.  I looked in the fridge to see the possibilities and in the freezer I had a bag of frozen blueberries.



Bob, Tammi and Ben were off on a mission to Lowes, so I grabbed my favorite Pampered Chef measuring bowl and mixed up some batter using a couple of cups of Bisquick, 1 c sugar, 2 eggs, and 1/2 c of milk.  I mixed the ingredients together and added the frozen blueberries at the last minute.  I used my Pampered Chef scoop to put the batter in my battered muffin tin and baked them for 20 minutes at 400.  When I brought them out of the oven, I sprinkled them with Penzey's Vanilla Sugar.

I ate one piping hot from the oven with a little butter.  The rest I cooled and bagged for our breakfast in the morning.  My house might still be a mess, but I feel so much better now!

  1. Comfort food. . . .it's what you needed. And after looking at that yummy photo...I need some comfort food, too! :)

    I can't imagine getting ready to move while wrapping up the school year. Wow.

  2. Happy moving, Terri. I hope that you have lots of help! I can't be domestic like that in the midst of chaos, but I sure can eat. Those look great!

  3. Everyone seems to be moving, Terri! I hope yours is pleasant and you have lots of helpers! Those muffins sound wonderful! Still recouperating from surgery, so first day in weeks I've visited my friends...so glad I dropped by!
