Bob's chili is a favorite at tailgates.  Here's Bob in his glory!
Winter is about to take that natural turn into Spring. While some will be celebrating that fact, I like winter and one of those reasons is chili.  Bob and I love making it because we can be creative with what we have on hand. 

Some may not agree that this is a chili recipe.  It certainly isn't much of a stew, like original chili was made, with chilis and beef.  This is more of a soup with chili seasonings, and much more like the chili I grew up with.  There is always the Great Bean Debate, too, whether beans should be in it or not.  In my house, beans.  Three kinds.  So for these last few days while Winter sputters out, here's a great chili recipe, easy to make, easy to eat!

Bob's Chili

Prep Time: 15 minutes
Cook Time: 30 minutes
Ingredients (8 large servings)
  • 1 lb ground beef, 90% lean
  • 1 lb ground turkey, 93% lean
  • 1 can crushed tomatoes
  • 1 can diced tomatoes
  • 1 can chili beans
  • 1 can black beans, drained and rinsed
  • 1 can red kidney beans, drained and rinsed
  • 1 medium onion, chopped
  • 2 carrots, chopped
  • 1 celery stalk, chopped
  • salt and pepper
  • 1 clove garlic, minced
  • 1 T chili powder
  • 1 t cumin
Instructions
Brown beef and turkey in a large dutch oven.  Add onions, carrots, celery, garlic and spices. Cook until vegetables soften and spices are fragrant.  Add tomatoes, and beans.  Bring to a simmer, cook for 20 minutes, add water if needed to keep from burning.
Or... you can place the combined ingredients in a crockpot and let simmer all day until serving.
