Breakfast Salad #SundaySupper

I crave salad in the winter and it is easy to understand why.  Even in this world of fresh produce all year long, my body longs for Farmers Market goodies during the winter.  I began ordering my avocados from California recently and so this avocado breakfast salad was a perfect addition to this week's #SundaySupper Winter Salad week!




Breakfast Salad

Prep Time: 15 minutes
Cook Time: 3 minutes
Ingredients (2 servings)
  • 2 medium ripe Avocados
  • 2 eggs
  • 1/2 cup chopped fresh cilantro
  • 1 small clove of garlic
  • 1 t sea salt
  • 1 medium lemon
  • Olive oil
  • A dash of red pepper flakes
Instructions
Poach eggs to your own specifications.
Peel and chop avocados. Add to a bowl, squeeze lemon juice all over and add salt. Gently toss.
In a mortar and pestle, mash garlic with a little salt. Add cilantro and continue to mash. Add in red pepper flakes and mash some more. Drizzle in olive oil until dressing comes together.
Spread avocados on two plates. Dress with dressing. Lay a poached egg on top. Sprinkle with salt and pepper as desired.
