Orange Mint Bundt Cake #BundtBakers

It's been awhile since I participated in Bundt Bakers but I missed it a lot when I was gone!  I love to bake and cake, any kind of cake, is my favorite.  I enjoy using a bundt pan because the cakes always look so pretty when they come from the pan.


The theme this month is A Thousand and One Nights.  Listen to how  Lara from Tartacadabra got us to get involved:

Let Scheherazade's tales ensnare you as they ensnared Shahryar. Let them inspire you to bake something with the most suggestive ingredients from Arabic, Persian and Indian kitchens.

Use pistachios, almonds, dates, raisins, cashews, spearmint, saffron, cardamom, rosewater, orange blossom water, figs, dried apricots, coconuts, sesame (obviously!)... anything you would expect to be served at Aladdin and Badroulbadour's table, while belly dancers entertain them and their guests.


I hope that you will enjoy this combination of orange and mint, and that you will be swept away by the romance of Arabic, Persian and Indian kitchens!

Orange Mint Bundt Cake

Prep Time: 10 Minutes
Cook Time: 40 minutes
Ingredients (12 servings)
  • 1 white cake mix
  • 3 egg whites
  • 1 c orange juice
  • 1/4 c vegetable oil
  • 2 T zest of one orange
  • 2 T finely minced spearmint
Instructions
Preheat oven to 350. Prepare bundt pan with cooking spray. Beat cake mix, egg whites, orange juice, and vegetable oil together for 4 minutes. Fold in zest and spearmint. Pour in to prepared pan. Bake at 350 for 35 minutes or until cake is golden brown and a cake tester comes out clean. Cool in pan 10 minutes, invert onto cake plate and cool completely. Top with a glaze made with 2 T orange juice to 1 c powdered sugar.

  21. I have always loved cooking and I love to bake always went by recipes. I have recently started experimenting and really love to bake. I love making bundt cakes as well. I love the ingredients you add together. I will be making this one for the family. This looks like an easy one to transport, I am traveling this weekend, My family will love this recipe.
