Grilled BBQ Strawberry Shortcake

Grilled BBQ Strawberry Shortcake is perfect for a backyard BBQ dessert.  Grilled strawberries are nothing new, but basting them with BBQ sauce is a unique way to serve them.  Top them on your favorite shortcake for an exciting and delicious dessert.




My grandmother introduced me to strawberry shortcake.  She had strawberries in her garden, and when they were ripe, we could go and pick some for dessert.  She'd remove the green tops, smash the strawberries and sprinkle with sugar. She'd whip up these perfect shortcakes (dry enough to absorb the juice from the berries) and after dinner, she'd cut them in half, pour a little cream on the bottom, spoon up some strawberries and juice, and top with vanilla ice cream or whipped cream, whatever was on hand. The cool cream mixed with the juices of the strawberries and with the shortcake, created a mix of textures that melted in your mouth!



Grilling the strawberries whole makes the process a lot easier. I like a sweet BBQ sauce and a sweeter balsamic vinegar for the glaze. It is more dessert-like with the sweeter flavors. However, mix it up! Your favorite sauce may have a perfect finish for the strawberries.

Grilled BBQ Strawberry Shortcake

The savory sweet combination of bbq sauce and sweet strawberries makes this a special dessert.
prep time: 15 Mcook time: 15 Mtotal time: 30 M

ingredients:

  • 1 lb strawberries, fully ripe
  • 1/3 c sugar plus 3 T sugar
  • 2 c baking mix
  • 1/3 c milk
  • 3 T butter, melted
  • 1 T balsamic vinegar
  • 1/3 c sweet BBQ sauce

instructions:

How to cook Grilled BBQ Strawberry Shortcake

  1. Preheat over to 350.
  2. Stir BBQ sauce and balsamic vinegar together and set aside.
  3. Set aside 6 large berries.
  4. Cut up the remaining strawberries and place in a bowl.
  5. Sprinkle the 1/3 c sugar over the strawberries and mash a bit.
  6. Let rest.
  7. Stir together baking mix, milk, butter and 3 T sugar.
  8. Divide into fourths and pat out 4 biscuits. Place on a baking sheet.
  9. Bake for 10 minutes or until tops is golden brown.
  10. Remove from oven and let cool.
  11. Heat an indoor grill to 350.
  12. Place the remaining whole strawberries on the grill. 
  13. Cook for 2 minutes on one side and turn.
  14. Baste the cooked side with the BBQ sauce mixture.
  15. Turn again and baste that side.  Continue for three rounds.
  16. To assemble, place a biscuit on a plate and poke with a fork several times.
  17. Drizzle on macerated strawberries with some juice.
  18. Top with a couple of BBQed strawberries.
  19. Top with cream if desired.
