Springtime Strawberry Shortcake

In the spring we start to see strawberries go very cheap and that is my sign to make strawberry shortcake! I use my mother in law's recipe, which creates a perfect cake to absorb all the juices you get from the fresh strawberries.



Shortcake

2 c biscuit mix (I use Pioneer)
1/2 to 3/4 c sugar (I use less)
1 c milk
1 t vanilla

Preheat oven to 350. Mix batter together to get a soft sticky dough. Spray cookies sheet with Pam. Form balls of dough (very sticky) and place them on the cookie sheet. Bake about 8-9 minutes until light brown on top.

Strawberries

1 pt strawberries, hulled and sliced
sugar

Cut up strawberries in a bowl. Sprinkle with sugar on top. Stir the sugar around. Mash with a potato masher, breaking up the big chunks. Let sit an hour or two to get the juices running. I usually keep mine on the kitchen counter.

Spring in Missouri

Just took a walk around our state capitol building, admiring the flowers and green green grass and thought you all would like to see where Missouri is in regards to Spring.

Keep in mind, our Capitol Gardeners are quite wonderful and most Missourians don't have beds quite like this at their homes, but we are getting close!

Sit back, get a cool glass of peach tea and enjoy!

D.A.R.

With MUCH help from a local woman, who is a fabulous resource for our community, I have completed the paperwork to see if I would be qualified to be a member of the Daughters of the American Revolution. It seems that my great (7 times) grandfather fought in North Carolina as a Patriot earning no further than a private but receiving a pension from the government (which I hear is a big deal). I am excited about tracing our lineage to such an important time in our history.

What was fun for me was that my relative's name was Richard Oliver, and Oliver is my maiden name. My lineage was traced through the male line, all Olivers, which I think was totally cool. If my brother had lived, he would have carried on a name that had lasted for seven generations (well, actually more, but I am not able to find out much prior to Richard Oliver). As it is, we have no male members of our family that will carry on our branch of the Oliver name.

For that reason I do use my maiden name as my middle name. It is on my diplomas and on my checkbook. I am very proud of it!

Spring and Tea

One of my favorite chat sites, Girlfriends Forever, sponsored a Spring Tea today. Here is the tea setup I enjoyed earlier this morning. Our morning in Missouri was sunny but somewhat cold so I had tea indoors while I enjoyed the movie Becoming Jane. I had a toasted mini bagel along with some of my MILs delightful cream cheese mints. With my mint tea, it was a delightful time. The little teapot makes enough for one, notice that the cup in under the teapot. The darling dish with the glass dome is from Cherry Hill Cottage.

As I was considering what to post this morning, I spent some time at The Inspired Room. This blog is so wonderful at picking the perfect thing to post. It has become one of my daily "must checks" because of that! I am always inspired!
