The Frenched Chicken is one of those recipes that feels a little special without requiring an entire afternoon in the kitchen. The lightly battered chicken gets beautifully golden in the skillet, while the white wine, garlic, butter, and fresh lime create a bright, savory pan sauce that tastes far more complicated than it is. Be sure to spoon some of those wonderful pan juices over the chicken before serving—you don't want to leave any of that flavor behind!
We served the chicken with this Sheet Pan Panzanella, hot from the oven, and the two were wonderful together. Traditionally, panzanella is an Italian bread salad made with tomatoes and day-old bread, but this warm sheet-pan version gives it a delicious twist. The bread becomes golden and crisp around the edges while soaking up the juices from the roasted tomatoes, olive oil, garlic, and red onion. Then Parmesan, fresh mozzarella, arugula, and basil bring everything together. The flavors just popped in our mouths!
I especially loved the contrast between the two dishes. The rich, garlicky chicken and buttery wine sauce were balanced by the tomatoes, fresh herbs, and splash of red wine vinegar in the panzanella. And don't overlook all those crispy, cheesy bits left on the sheet pan—scrape them right into the salad! Served together, these two recipes make a beautiful dinner that feels company-worthy but is still relaxed enough for an evening at home.
