Pasta with Lemon, Zucchini and Basil

Pasta with Lemon, Zucchini and BasilBloggers from all over have put together over 30 different recipes for your cooking pleasure.  Here at Our Good Life, I have Pasta with Zucchini, Lemon and Basil. Interesting combination, but here's the why.  We always get a lot of zucchini in the summer from the Farmer's Market because it is cheap.  We grow a lot of basil.  So for pennies, we can put together this great, tasty dish!

Pasta with Zucchini, Lemon and Basil

Prep Time: 10 minutes
Cook Time: 10 minutes
Ingredients (4 servings)
  • 8 oz dry pasta
  • 4 T olive oil
  • 8 c water
  • 1 zucchini, seeded, quartered and sliced
  • 1 small yellow onion, small diced
  • salt and pepper
  • red pepper flakes
  • 4 large basil leaves, chiffonaded
  • 4 oz goat cheese
  • 1 medium lemon
Instructions
Put on 8 cups of water to boil. Salt (1 t) and bring to a boil. Add pasta, cook until slightly al dente, about 9 minutes.
Heat 4 T olive oil in a large skillet. Add onion, saute. Add zucchini and cook for 5 minutes, or until crisp/soft. Add garlic. Cook until garlic softens. Be careful not to burn.
Add cooked pasta and 1 cup of pasta water, stir well. Add in goat cheese, stir until pasta is coated and cheese melts. Zest lemon over pot, and stir well. Add basil, stir until basil wilts.
Serve.
