Patriotic Slaw #SundaySupper

I love the Fourth of July, almost as much as I love my birthday and Christmas!  I love to decorate my home, and have family and friends over and watching fireworks every where and any where I can!  I am fortunate that where I live they love the Fourth of July as much as I do.  We are invited to eat at friends' houses and I always want to bring something festive and fun, like this Patriotic Slaw!

Patriotic Slaw

This slaw will be so much fun to share with your friends and family and is so simple to make, especially if you are using prepackaged slaw mix.  It is a breeze to throw together and yet is festive and delicious.  It's best if it sits in the refrigerator over night.  The flavors have a chance to marry that way.  I usually drain the salad before serving, too.

Patriotic Slaw

1 pkg of slaw mix
1 c of fresh blueberries
1 red pepper, sliced thinly
1 jicama, sliced thinly
1/4 c mayo
2 T lemon juice
2 T white wine vinegar
1 T white corn syrup
1 T water
salt and pepper

Toss the slaw mix, blueberries, red pepper and jicama in a bowl and set aside.  Blend mayo, lemon juice, vinegar, lemon juice, syrup, water and salt and pepper (to taste) together.  Pour dressing over salad and mix thoroughly.  Refrigerate long enough for flavors to mingle (I make it the night before).
