Cranberry Champagne Cupcakes #ChristmasSweetTreats

I wanted to create a simple but fabulous recipe that could be made quickly for a festive holiday treat. Since I am starting with a white cake mix, this will be a fast way to get a dessert on the table.  These are celebration cupcakes, so think New Year's Eve, bridal showers or special birthdays!

Take a close look at those sprinkles. These are hands down the best sprinkles I have ever used. I will never be able to go to the store and just get little, colored sprinkles ever again. You have to go look!

Cranberry Champagne Cupcakes are perfect for celebrating life's big events: Christmas, New Years, Weddings and Special Birthdays!


Cranberry Champagne Cupcakes

1 white cake mix
3 egg whites
1 c Sprite Cranberry (when it's not the holidays, use regular Sprite)
1/3 c vegetable oil
1 can whole berry cranberry sauce
1 T Lorann Oils Sparkling Wine Flavor
1/2 c Sweets and Treats sprinkles

Preheat the oven to 350. Prepare cupcake pan with paper wrappers. Mix white cake mix, egg whites, Sprite, and oil and beat for 2 minutes until batter is light and fluffy. Stir in the Sparkling Wine Flavor.
place 1/4 cup of batter in each cupcake paper. 

Dollop a teaspoon of cranberry sauce in the middle of the batter.

Top the cranberries with 1/4 cup of batter.  Continue until all cupcakes are made. Bake for 20 minutes in the oven. Remove and cool completely.  Frost with prepared white icing with 1 t of sparkling wine flavoring mixed in.  Top cupcakes with Sprinkles!
