Cheesy Chili Cornbread Casserole

Casseroles are quick and easy, portable and satisfy your hungry family. You can make them ahead of time and reheat (usually with even better flavor!) Each of my family has their go-to casserole and for me, it is this Cheesy Chili Cornbread Casserole!

Winter is the perfect time to dig into comforting and filling dishes like this Cheesy Chili Cornbread Casserole. Tucking into something so warm makes you feel like getting cozy with a blanket in front of a snapping fireplace.


Could there be a prettier chili? I had some fresh tomatoes that I chopped up and added to the mixture.


Pour the chili into a 9 by 13-inch pan. I love using this stoneware from Pampered Chef.


I like my cornbread to have a little crunch to it, so we let it bake a little bit longer.  My son-in-law likes to spread good butter over his cornbread before he eats it. It is delicious that way!

Cheesy Chili Cornbread Casserole

A fabulous way to use your leftover chili! You can also make the chili fresh and it is divine!
prep time: 20 minscook time: 20 minstotal time: 40 mins

ingredients:

  • 2 boxes Jiffy cornbread mix
  • 2 eggs
  • 2/3 milk
  • 1 lb hamburger
  • 1 onion chopped
  • 1 can chopped chili tomatoes
  • 2 c shredded cheddar cheese
  • 1 T chili powder
  • 1 T minced garlic
  • 1 can (small) tomato sauce
  • 1 15 oz can of chili with beans
  • salt and pepper

instructions

  1. Preheat oven to 400.
  2. Make both boxes of cornbread according to package directions, set aside.
  3. Brown hamburger in a large skillet.
  4. Salt and pepper hamburger as desired.
  5. Add onion and cook until onion is translucent.
  6. Add garlic, cook for 30 seconds.
  7. Add tomatoes, tomato sauce,  and chili with beans.
  8. Heat until boiling.
  9. Pour into 9 by 13 pan.
  10. Sprinkle cheese over the chili mixture.
  11. Pour cornbread on top of chili. 
  12. Bake for 20 minutes or until cornbread is done.
  13. Remove from oven and let sit for 10 minutes.
  14. Serve.

NOTES:

Serve warm with sour cream and chopped cilantro.
