Spinach Salad with Creamy Hard Boiled Egg and Homemade Garlic Croutons

 When I think of salad, I think of the side salads my mother-in-law Irene used to make on Sunday steak nights.  They were a meal in itself: crisp greens, eggs, croutons, onion, olives, and a French Bleu Cheese dressing that we all loved.  Now I think of hearty salads that can serve as a meal, without thinking of "sides."

Before I get to my salad, please note the delicious salads listed below for a wider range of options. These good salads rely on fresh produce and well-prepared proteins to keep you satisfied throughout the afternoon.  I cannot wait to give each of them a try.


This Spinach Salad with Creamy Hard Boiled Egg and Homemade Garlic Croutons is versatile, too.  The basic premise is a large spinach salad with chopped egg and homemade croutons, but you can easily add last night's leftover proteins to extend the salad's staying power.  For me, the spinach provides good roughage and with a good salad dressing made with healthy fats, so will stick with me during my afternoon workday.


We topped our salad with a light lemon dressing made like this: 1/2 c olive oil, 1/4 c lemon flavored olive oil, salt and pepper, 1 t lemon juice, 1 T dijon mustard. Mix together thoroughly and add to the salad at the last minute.

  3. Whenever I serve a spinach salad, I like to use citrus in the dressing so your lemon one would be ideal, Terri. I remember reading a long, long time ago that the citrus increases our absorption of iron from the greens. Plus it's just downright tasty!
