Shirley's Potato Soup #SundaySupper

Such a delightful event this week as we share our mom's favorite dishes.  I know my mom has many but this potato soup, called Shirley's Potato Soup, is unique.  This soup, made with creamy milk, potatoes and onions, has egg dumplings in it and that makes it different from most.  I don't know the orgin of the soup, but I do know that my Grandmother Lorraine Wilson Holt also made it.


This is a photo of my mom and me when I was first born.  Brownie is my Grandmother's dog.  I'm not sure he was very fond of me!

A few years ago, we started asking Mom to make this soup for us for Christmas.  We love the feeling of home that it brings, plus we are preparing the next generation to love it as much as us.  Make sure to include your babies in the holiday festive spirit and do not forget about their food. Four generations (that we know of!) have enjoyed this potato soup.




Shirley's Potato Soup

Prep Time: 15 minutes
Cook Time: 40 minutes
Ingredients (4 servings)
  • 8 red skinned potatoes, sliced into 8ths
  • 1/2 medium white or yellow onion, small dice
  • 6 c 2% or whole milk
  • 1 egg
  • 4 T flour
  • salt and pepper
Instructions
Boil the potatoes and onion together in a pot of salted water, until fork tender, about 20 minutes. Drain. Add in milk and bring to a boil. While waiting for the milk to boil, mix egg and flour together until a dough forms. Drop small amounts of dough into boiling milk and cook until dumplings are cooked through. Serve in a bowl with plenty of salt and pepper, to taste. Delicious with hot buttered toast.
