Copycat Cauliflower Cheese Soup

I love a good Cauliflower Cheese soup and it is not always available at my local eateries.  I did have a wonderful cauliflower cheese soup at a restaurant here in St. Louis that I love.  It's not on the menu often, so when they have it, I hope I am around!  Featured here!



Since they were reluctant to share their recipe, which I certainly understand, I tried to replicate it here.  I took a few liberties with the recipe, since all the food we make here ends up being lunch, dinner, dessert or a snack!  In this case, I added a little heat with the siracha.

Cauliflower cheese is a popular side dish in England, at least it was where we ate. You could find it on almost every menu. We love cauliflower cheese and ordered it regularly.  It is no small stretch of the imagination to make this cheesy goodness into a soup.


Cauliflower Cheese Soup

2 T butter
1 medium onion chopped
1 medium cauliflower, chopped
1/4 c flour
2 c heavy cream
2 c water
1 c chicken broth
2 c sharp cheddar, shredded
salt to taste
1 T dijon mustard
siracha to taste

Saute the onion with the butter in a dutch oven.  Cook the onion until it is translucent.  Whisk in the flour, and cook for a minute.  Stir in cream, water, and chicken broth.  Bring to a high heat, add in cauliflower chunks.  Cook for 15 minutes or until cauliflower is fork tender.  Blend soup in batches.
Return soup to dutch oven, and stir in mustard, salt and cheese.  Heat until cheese melts.

Top with more shredded cheddar and chopped fried bacon.

So so good, and would be delightful with a crusty bread.
