Make It and Take It Burrito Bowls #SundaySupper

Around the second or third grade, students can start helping to create their own lunches for school. How do I know this?  As a 25 year veteran educator, who has done countless lunch duties, I am very familiar with the capabilities of our students.  Not only are they very capable, but they will more likely eat a lunch they prepared!  Two wins!

This burrito bowl is so easy to put together and will be very satisfying and healthy.  Choosing a healthy fat like avocados will keep your student full through the afternoon hours.  If you organize well, you can make tacos or burritos the night before and use the leftovers as lunch!

Burrito Bowls

1 pkg Heat and Serve rice
1/4 c prepared taco meat or grilled chicken
1 T shredded cheese
1 T taco sauce
1 T chopped tomato
1/4 peeled avocado

Heat the rice for the time allotted.  Open the bag and set aside.  Open lunch container (I love these lunchbots below!) and layer in this order:  rice, meat, cheese, sauce, tomato, avocado.  Seal and pack. Don't forget to add a few taco chips to the lunch bag!  This lunch is especially good with watermelon chunks, too!
