Easy Instapot Roast Chicken #SundaySupper

When school starts back again, the days feel so short and life gets so busy that having time to cook for the family seems impossible to find.  Sunday Supper Movement is all about finding the time to sit down together and have a meal.  This recipe is so easy and instead of hours you can roast a chicken in under an hour, including prep!



Are you an Instapot fan?  We just got ours and really love it!  We have made several things but I am in love with this delicious roasted chicken.  Along with a few steamed vegetables, this makes an entire meal, and the leftovers are great for lunch.



Easy Instapot Roast Chicken

1 3-5 pound roaster
2 T softened butter
your favorite chicken spice blend (we love lemon pepper!)
1 medium onion, peeled and quartered
4 garlic cloves, smashed
1/2 c water
1/4 c lemon juice

Turn on the saute setting and let heat.  Add 1 T of the butter and melt.  Place the chicken in breast down and brown. Brown the sides, too.

Remove the chicken briefly and put in the trivet that comes with the pot.  Add the water and lemon juice.  Coat the chicken with the remaining butter and sprinkle the spices generously over the chicken.  Stuff the cavity with the onion and garlic. Replace into pot.

Lock the lid and set the pot to Sealing.  Select Poultry and increase the Type of Pressure to High.  Set the timer using this formula: multiply the number of pounds by 6 (as in minutes) so a 3 pound chicken would be 18 minutes.

Cook, and then let the pot depressurize naturally, about 15 minutes.  That's it!
