Low Carb Tacos #SundaySupper

Taco Tuesday has returned to our household now that I can whip up some low carb taco shells to replace the corn shells I can no longer eat.  How do you make a delicious low carb taco shell?  Read on, my friends!

Cheese.  Yep, all you have to do is to melt a 6" diameter circle of shredded cheddar, carefully pick it up and lay it over a utensil handle until it firms up.  Make as many as you can eat in one sitting.  You can also use parmesan, I just happen to love the cheddar.  There is a skill to this, so don't get discouraged if you have to practice!  The trick is to use a rather thin layer of cheese, and to get a little brown on the edges.



Next, make your hamburger meat.  I use approximately one pound of ground beef and Mrs. Dash spicy blend and a half an onion, chopped.  Fry the beef and onion, add spices. You can include salt and pepper, too.

Get our your favorite taco bar toppings.  For us, we love avocado, sugar free salsa, and sour cream.  Spoon the beef mixture into the shells.  Be careful if your shells are thin as they will crack and fall apart.  Add the toppings you love.


Eat!

Low Carb Tacos

1 lb ground beef
4 c shredded cheddar (1/2-1 c per shell)
2 T Mrs. Dash spicy seasoning
salt and pepper to taste
1/2 medium onion, chopped
1 avocado, sliced
2 T sugar free salsa per taco
1 T sour cream per taco

Preheat oven to 350.  Spread cheese in a six inch circle. Bake until melted.  Using a wide spatula, pick up cheese and lay over a handle of a utensil that is balanced on two glasses.  Let cool, set aside. Repeat until you have as many shells as you need.  Brown beef with onion. Drain.  Add seasonings.  Spoon hamburger meat into shell and top with avocado, salsa and sour cream.  Serve.
