Spinach Ravioli Bake #SundaySupper

It is tradition in our Catholic family to have a meatless meal on Ash Wednesday and on Fridays during Lent.  This meatless casserole is delicious and satisfying.  Who doesn't love cheesy pasta?

I love this easy and convenient recipe. It uses frozen ravioli (no need to thaw) and my favorite jarred Alfredo sauce.  In the recipe I say to use jarred pesto but I still have frozen pesto in my freezer that I am using.  If you have a homemade Alfredo sauce that you love, sure, use it!

Spinach Ravioli Bake meatless casserole


Even though I am suggesting this for a Lenten meal, it is a wonderful week night meal, too.  Meatless Monday would be so happy to have this as the featured recipe. This is definitely a winter comfort food, but the spinach gives us hope for the spring.

Spinach Ravioli Bake

1 box frozen cheese ravioli
2 jar alfredo sauce
1 jar pesto
2 c shredded mozerella
1 bag of baby spinach
Parmesan cheese for dusting
1/4 c water or milk

Preheat oven to 375.  Prepare a 9 by 11 casserole dish by spraying it with a cooking spray.  Add water to alfredo sauce. Spread 1/4 of the alfredo sauce in the pan.  Add dollops of the pesto over the alfredo and swirl in. Top with cheese ravs in one layer.  Top with spinach, then top with 1/2 of the cheese.  Repeat the layer one more time.  Shake on parmesan cheese. Cover with foil, and bake about 30 minutes, or until bubbling hot.  Let set 5 minutes before serving.
