Lemon Basil Ice Cream #FoodieExtravaganza

Foodie Extravaganza is where we celebrate obscure food holidays or cook and bake together with the same ingredient or theme each month. This month - Camilla of Culinary Adventures with Camilla is hosting - she invited bloggers to come up with creative ice cream creations.

So during this first full month of summer, it's all about ice cream. But that can include gelato, semi-freddo, and even popsicles. Go wild!

My take on this fun adventure was to use basil, something we have growing by leaps and bounds during this wet summer.  Together with the lemon, this ice cream is a perfect summer refresher, not too sweet, but cold and invigorating!  The best part:  this is a no churn ice cream!  It takes about 20 minutes from blender to bowl!


Lemon Basil Ice Cream

Prep Time: 6 minutes
Cook Time: 15 minutes in the freezer

Ingredients (4 servings)
  • 6 oz almond milk
  • 2 oz agave nectar
  • 1 T lemon extract
  • 1/4 c protein powder, vanilla
  • 14 basil leaves
  • 3 c ice
  • 1 frozen banana, peeled and chunked
Instructions
In the BlendTec, layer in this order:
almond milk, agave, lemon extract, protein powder, basil, banana, ice
Hit the ice cream button on the blender, let it do its magic!
Place into a container and put in the freezer for 15 minutes to firm up. You can serve it soft serve if desired.
