Grilled Banana Boats #SundaySupper

We've been making Banana Boats since Ashley was a tot, and she still asks for them regularly during the summer.  It is our go-to summer dessert.  This banana boat has a small nod to the S'more, using graham cracker cereal for a little crunch.

Our #SundaySupper theme this week is Throw Something on the Barbie.   Grilling permeates our neighborhood during the summer and we are definitely one of those who rely on grilling for our meals.  Did you know that there is a distinct difference between BBQing and Grilling? According to Gary Wiviott, author of "Low and Slow: Master the Art of Barbecue in 5 Easy Lessons"  grilling is "hot and fast" and barbecue is "low and slow."  I learned that on the Sunday Supper website.  If you aren't familiar with it, you should go and check it out!

Banana Boats can easily be personalized and a Banana Boat station would be such an easy way to do this. Have chocolate chips, mini marshmallows, granola, peanut butter chips, chopped almonds, chopped walnuts, bananas, Cinnamon Crunch cereal, and foil squares ready to go!

Banana Boats Wrapped in Foil Packets (made into a sundae)

1 banana per person
2 T chocolate chips
2 T mini marshmallows
Cinnamon Toast Crunch cereal pieces

Peel banana down the front, but do not tear off peel.  Scoop some of the banana out to make a hollow place for your toppings.  Spoon in chocolate chips, marshmallows and cereal.  You can cover this with the banana you scooped out (or not) then top with banana peel.  Place banana in the middle of the foil.  Wrap the banana securely but make sure it is easy to check if the toppings are hot.  Place on grill for approximately 5-10 minutes, depending on how hot the grill is.  Use tongs to remove the packets from the grill.  Scoop out vanilla ice cream.  Unwrap the bananas, peel back the peel, and scoop contents on top of the ice cream.  Eat immediately!
