Bailey's Chocolate Cherry Pudding #tastecreations

St. Patrick's Day is approaching and this delicious dessert would be perfect to end your meal.  Using Bailey's Irish Cream makes this an adult dessert, but it is easy to leave out for the kids.  This month our Taste Creation Bloggers focused on Irish beer or Irish whiskey for St. Patrick's Day!


As kids, we loved wearing the green and pinching our classmates who forgot.  I loved how our teachers would have shamrock stickers for those kids who didn't wear green.  I secretly didn't want anyone to get pinched!

Since I was newly married, I always made a dessert for St. Patrick's day.  We have had all sorts of mint desserts or cupcakes that were dyed green with food coloring.  This dessert isn't mint, nor is it green!  It is still Irish all the same, using Bailey's Chocolate Cherry liqueur.  I love this drink, it is like drinking a chocolate covered maraschino cherry!

Bailey's Chocolate Cherry Pudding

Creamy pudding that tastes like a chocolate covered cherry!
prep time: 20 minscook time: total time: 20 mins

ingredients:

  • 1 box instant pudding
  • 2 c milk
  • 24-30 vanilla wafers
  • 1/2 c chocolate chips 
  • 1 c whipping cream
  • 1 t sugar
  • 4T Bailey's Chocolate Cherry liqueur
  • 2 T sprinkles

instructions

  1. Make the pudding according to package directions.  Set aside.
  2. Whip cream with the sugar and 2 T of the Bailey's Chocolate Cherry liqueur.  Refrigerate.
  3. Place vanilla wafers in an individual serving dish.
  4. Stir in 2 T of Bailey's Chocolate Cherry liqueur into the pudding.
  5. Spoon pudding on top of the vanilla wafers.
  6. Sprinkle chocolate chips on top of pudding, distributing evenly.
  7. Spoon on whipped cream.
  8. Dust with sprinkles.

  6. What a great dessert treat for St. Patrick's Day! Nobody in our family makes any dessert with alcohol, although I do like the non-alcohol option for the kids and adults who don't drink.
