Blackberry Lemon Coffee Cake #SpringSweetsWeek

For Day 4 of #SpringSweetsWeek, I am loving this Blackberry Lemon Coffee Cake.  Coffee Cakes have gone by the wayside, as fewer people get together for coffee and chatting than in my growing up days. This coffee cake is a spin-off one my mom used to make!  I hope you enjoy it!

Great for dessert, but try it as an addition to your Saturday morning breakfast. It will start your day off right!

Blackberry Coffee Cake with Blackberry Sauce

Once you go berry picking this summer, use your bounty to make this delicious coffee cake!
prep time: 20 minscook time: 55 minstotal time: 75 mins

ingredients:

For the cake
  • 2 c bisquick
  • 2/3 c milk
  • 1 egg
  • 2 T sugar
  • 1 T fresh lemon juice
  • 1/2 c blackberries, chopped and rinsed
For the sauce
  • 1/2 c water
  • 1/2 c Torani Blackberry Syrup
  • 1/2 c sugar
  • 1/4 cup blackberries

instructions

For the cake
  1. Preheat oven to 400.
  2. Grease a 9 by 9-inch pan.
  3. Stir together the first five ingredients.
  4. Fold in blackberries.
  5. Pour into pan.
  6. Bake for 25 minutes.
For the Sauce
  1. Combine ingredients in a small saucepan. 
  2. Bring to a boil, reduce heat, reduce to half.  
  3. Refrigerate until cool.
