Keto No Bake Cheesecake

It's #NationalCheeseCakeDay!  How are you celebrating?  I am sharing a wonderfully delicious keto style cheesecake that you are going to love! It's not just for keto, people!



This is the creamiest and perfect cheesecake for those of you who want to have dessert, but not the carb punch that cheesecake can have.  A total of 5 carbs for a dessert that any cheesecake lover would love!

You can make it in less than 5 minutes, and if you don't care if the cheesecake is firm, go ahead and eat it!

Keto Cheesecake in a clear jar

Since the butter isn't cooked, use good, grass-fed butter.  You can use butter-flavored coconut oil, too.  And ghee.  You have options here.

Vanilla keto cheesecake


I use Swerve (powdered) in my recipe because I love the taste. I use powder because the granular doesn't melt and stays grainy.

No Bake Keto Cheesecake

A portion-controlled, delicious cheesecake that is keto approved!
prep time: 10 Mcook time: 2 hourtotal time: 2 H & 10 M

ingredients:

For the crust
  • 1 1/2 T hazelnut flour, packed
  • 1/2 t Swerve Sweetener
  • 1 t butter, melted
For the filling
  • 1/4 c Cream cheese, softened to room temperature
  • 4-6 t Swerve
  • 2 T sour cream
  • 1/4 t vanilla bean paste (you can use regular vanilla)

instructions:

How to cook No Bake Keto Cheesecake

  1. In a small bowl, stir together the almond flour and sweetener. Add in the butter and stir until crumbly. Press into the bottom of a small dish.
  2. Beat the cream cheese and sweetener (sweeten to taste) in a medium bowl. Add in the sour cream and vanilla paste and beat again until combined.
  3. Spoon over the crust. Chill as long as you can stand to wait, but it should be done in 2 hours!

  1. How I love cheesecake! I am not on the keto diet, but I might try this. I am not sure of what Swerve is, but I might look for it as I am sure it is some type of sweetener.

    1. Good morning, Carol! Swerve is a sweetener that doesn't impact blood sugars. You can find it on Amazon! The powder melts much better than the granuals.

  7. I love cheesecake but making an entire cheesecake for myself is dangerous. I'd be guilty of eat way too much and then wonder why I gained 5 pounds in a month. I've considered transitioning to some keto recipes so that I can enjoy the good stuff without the additional carbs. I'm going to have to give this one a try soon.
