Two Ingredient Peanut Butter Fudge

For March we are sharing recipes using peanut butter.  I have had so much fun making these two-ingredient fudge recipes that I wanted to give another one a try:  Peanut Butter Cream Cheese Fudge!  You can see my other creations here:  Chocolate Cherry Fudge and Simple Fudge.  My most popular fudge recipe on the blog is my Easter Bunny Fudge.  It's so pretty and delicious, too!




Peanut butter is such a fun ingredient, it's often confused as a condiment, but it's a spread that is easily worked with. I love it the most melted on a piece of sourdough toast, first coated with sweet cream butter and then peanut butter.  Do you have a preference for peanut butter styles?  My husband loves Jif Smooth, and I love crunchy anything!  Could we be any further apart?  So we always have at least two jars on hand!




We both love natural peanut butter, but man, stirring the oils back into the jar is so time-consuming, until now!  I found this amazing tool that makes the stirring go quickly, and I want to share it with you! It looks like a curvy metal straw, that you insert into the jar and just turn!  The oils go back into the peanut butter quickly and smoothly.  Plus it comes with this adorable credit card-looking thing that scrapes all the peanut butter off the straw for easy cleaning.

Tips for making this fudge that I have learned after making several batches:

  • You can microwave the frosting right in the can.  It will be hot, so use a potholder to remove it from the microwave and pour it immediately into a bowl.
  • Microwave the peanut butter until it is slightly runny and pour it into the bowl with the frosting.
  • Stir immediately.
  • Pour it into a loaf pan that has been lined with parchment paper.  This makes for easy removal when you are done.
  • Cool completely before cutting.  
  • Use a serrated knife for cutting into small pieces.  This fudge is rich!

Two Ingredient Peanut Butter Cream Cheese Fudge

Simple and mostly fail-proof!

Ingredients

  • 1 container of premade cream cheese frosting
  • 15 oz container of smooth peanut butter

Instructions

  1. Open jar of peanut butter and scoop into a microwave safe bowl.  Microwave for one minute, stirring every 15 seconds.  Peanut butter should be runny.  
  2. Open frosting, remove all traces of the foil covering.
  3. Microwave for 45 seconds, stir, remove from microwave carefully because it will be hot.
  4. Pour into a bowl.
  5. Stir the two ingredients together, either marbling (a swirl effect) or completely.
  6. Pour into a prepared loaf pan covered with a sheet of parchment paper for easy removal.
  7. Cool completely and cut into small pieces.
