Deviled Eggs with Shrimp #SundaySupper

Hola!  This week at #SundaySupper we are sharing Spanish tapas with you.  I love tapas, the sharing of food is always a fun time.  I like to compare tastes with other people and get their take on the experience!

With these Deviled Eggs with Shrimp, you'll have a lot to talk about!  The green olives add a nice salty bite to these creamy eggs.  That's why you don't see any salt added to the recipe.  The shrimp also has a briny-ness to them and adds a delightful texture.

Tapas are a fun way to host a weekend gathering for friends.  Make a couple of tapas, ask friends to bring one to share, and with a pitcher of Sangria, you will be set for the night!

Huevos Rellenos de Gambas

Huevos Rellenos de Gambus

Prep Time: 5 minutes
Cook Time: 20 minutes
Ingredients (24 halves)
  • 12 hardboiled eggs
  • 8 green olives
  • 1 c peeled and cooked chopped shrimp, plus 24 shrimp for garnish
  • 4 T mayo
  • 1/4- 1/2 t sriracha sauce
  • paprika
Slice eggs in half lengthwise. Scoop yolks into a medium sized bowl. Mash yolks with a fork. Chop olives and shrimp. Add to yolks. Add mayo, one T at a time. Stir, adding more mayo until the mixture holds together but isn't too wet. Scoop yolk mixture into the egg whites. Garnish with paprika and 1 baby shrimp.
