Cold Irish Day Cocktail

How does an iced coffee drink sound right now?  I created this Cold Irish Day while sitting in a March snowstorm here in Missouri and I am here to tell you that it was delicious!

Let's talk about this Cold Irish Day cocktail.  I started with a cup of fresh brewed strong coffee.  I used the Donut Shop K-cup but you can use your favorite coffee.  I poured it over ice to cool it down.  Then I added 2 oz of Kaluha and stirred well.  I added 1 oz of Bailey's Irish Whiskey to get a creamy effect.  I filled a cocktail glass with ice and poured the cocktail over the ice and garnished with whipped cream and a sprig of thyme.  



The effect is a cool drink with a creamy base.  I can see that I will enjoy a Cold Irish Day many times!  It is delicious!

Cold Irish Day Cocktail

8 oz strong fresh coffee
2 oz Kaluha
1 oz Bailey's Irish Cream
8 oz ice
2 T whipped cream
1 sprig of thyme

Pour the coffee over the ice and let sit for two minutes or until coffee loses its heat.  Remove the ice.  Add the Kaluha and Bailey's Irish Cream.  Stir well.  Pour mixture over a glass of ice.  Add whipped cream and a sprig of thyme for garnish.
