Smoked BBQ Pork Steaks

Join me for a St. Louis style barbequed pork steak, smoked on the grill and then seared to lock in the juices and the BBQ sauce!




My husband and I relocated to the St. Louis area in 2012. Our daughter lived in Indiana and we wanted to be able to drive to her home in around 6 hours.  We knew we'd love the St. Louis area as it has its own food scene with many local favorites.  Toasted ravs (ravioli) from Rigazzi's on The Hill, Ted Drewe's frozen custard (my favorite is vanilla, topped with whatever is sounding good at the moment!) and St. Louis style pizza, from Imo's.  Ted's is celebrating it's 90th birthday this year!


Lots of folks around here add beer to the basting sauce, but I love to add A&W root beer, the read deal with sugar, so that the sugar carmelizes on the meat.  You can see my A&W inspired pork steak here.  

Pork steaks are a popular fundraiser in Missouri.  Every weekend you can see smokers and grills set up under pop up tents in a grocery store parking lot.  They are selling BBQ pork steaks, with a corn on the cob and a slice of white bread, all served up in a styrofoam container.  We did many of these for our daughter's ice skating team.  I miss those days!

Pork steak is cut from the butt, which is why it benefits from slow cooking. Don't confuse it with the pork chop, which is from the loin. The chop is much leaner.

Smoked BBQ Pork Steaks

The most tender pork steaks are slow cooked in a smoker.
prep time: 5 Mcook time: 2 hourtotal time: 2 H & 5 M

ingredients:

  • 2 lbs pork steak
  • 2 T Rib Rub
  • 1/2 c BBQ sauce 

instructions:

How to cook Smoked BBQ Pork Steaks

  1. Soak wood for 30 minutes.
  2. Season pork with rib rub.
  3. Heat smoker with charcoal. Bring to the temp of 225. 
  4. Add wood chunks.
  5. Preheat gas grill to high.
  6. Smoke for 90 minutes at 225 indirect heat, with applewood 5 chunks of 1 by 1 by 1  until it reaches an internal temp of 15, turning occasionally.
  7. Brush on BBQ sauce.
  8. Sear on both sides.
  9. Baste with BBQ sauce again, and remove from grill.
  10. Let rest for 10 minutes.
  11. Serve.

NOTES:

We like our pork steaks cut thick, around 3/4 inch.

  1. This sounds really good! We like pork steaks as well. I find that I generally like them better than pork chops. I have never used A&W, but I have used Dr. Pepper.
