Smoked BBQ Pork Steaks Recipe

Smoked BBQ Pork Steaks Recipe

My husband and I relocated to the St. Louis area in 2012. Our daughter lived in Indiana and we wanted to be able to drive to her home in around 6 hours. We knew we'd love the St. Louis area as it has its own food scene with many local favorites. Toasted ravs (ravioli) from Rigazzi's on The Hill, Ted Drewe's frozen custard (my favorite is vanilla, topped with whatever is sounding good at the moment!), and St. Louis style pizza, from Imo's. Ted's is celebrating its 90th birthday this year!



Lots of folks around here add beer to the basting sauce, but I love to add A&W root beer, the real deal with sugar so that the sugar carmelizes on the meat. You can see my A&W-inspired pork steak here.  

Pork steaks are a popular fundraiser in Missouri. Every weekend you can see smokers and grills set up under pop-up tents in a grocery store parking lot. They are selling BBQ pork steaks, with corn on the cob and a slice of white bread, all served up in a styrofoam container. We did many of these for our daughter's ice skating team.  I miss those days!

Pork steak is cut from the butt, which is why it benefits from slow cooking. Don't confuse it with the pork chop, which is from the loin. The chop is much leaner.  One of the best ways to cook them is using one of these best offset smokers.

Smoked BBQ Pork Steaks

The most tender pork steaks are slow-cooked in a smoker.
Prep time: 5 minutes Cook time: 2 hour Total time: 2 H & 5 M

Ingredients:

  • 2 lbs pork steak
  • 2 T Rib Rub
  • 1/2 c BBQ sauce 

Instructions:

  1. Soak wood chunks for 30 minutes.
  2. Season pork with rib rub.
  3. Heat smoker with charcoal. Bring to the temp of 225. 
  4. Add wood chunks.
  5. Smoke the pork steaks for 90 minutes at 225 indirect heat, with applewood 5 chunks of 1 by 1 by 1  until it reaches an internal temp of 145, turning occasionally.
  6. Preheat gas grill to high.
  7. Brush on BBQ sauce.
  8. Cook the pork steaks on both sides.
  9. Baste with BBQ sauce again, and remove from grill.
  10. Let rest for 10 minutes.
  11. Serve.

Smoked BBQ Sauce Recipe Ideas 

Classic Barbecue Sauce

A traditional favorite, this sauce pairs beautifully with slow-smoked pork steaks, dry brined pork shoulder, Boston butt, or even pulled pork. Overall, put it with anything, it's pretty darn delicious. It's a ketchup-based sauce with a hint of brown sugar, apple cider vinegar, Worcestershire, garlic, and smoked paprika. Yum! It's perfect for brushing on right after you sear your pork steaks to lock in the juices.

Spicy Chipotle

If you like a little heat with your meat, this one brings the fire to the party. Smoked chipotle peppers and adobo give this sauce a bold kick, which pairs wonderfully with seasoned, tender, and juicy pork steaks that have savory BBQ rubs. I really like this one if I'm craving a lil extra spice.

Pro tip: After your pork steaks reach an internal temperature of 145°F, give them a generous coating of the sauce and then let them rest for 15 minutes before serving. The flavor will sink right in.

Mango Habanero Sauce

This tropical-inspired BBQ sauce is sweet on the tip of your tongue but leaves a tingle down your throat. Pureed mango, lime juice, habanero, and honey come together to make a bold glaze that will wake up your taste buds. If you like something a bit more spicy, but still crave a sweet taste, this is the sauce for you!

Cherry Bourbon BBQ Sauce

This bold, fruity sauce balances sweet cherries with the warm depth of bourbon. Simmered with tomato paste, brown sugar, garlic, and a splash of vinegar, it's absolutely delicious on dry-brined or slow-smoked pork steaks. This is definitely a special occasion sauce!

Honey Herb BBQ Sauce

For a savory-sweet twist, opt to mix honey, roasted garlic, thyme, and rosemary into a yummy tomato base. This sauce is great for when you want something a little fresher and more herb-tasting.

  20. You lost me more than once on this recipe but where you really lost me is soaking wood chips and a gas grill. First, soaking chips just causes a dirty smoke from smoldering chips. It doesn’t produce a thin blue smoke that you want when cooking. Second, a gas grill. Go stick burner or at least charcoal. Third, you said thick and then 3/4 inch steak. That’s not a thick pork steak at all.

    1. Thanks for your comments! We disagree about soaking the wood chips, we get a wonderful smoke for that short time. Second, we like the gas grill for the sear, and not starting a second charcoal grill just to sear. Third, we have to order our pork steaks cut at the 1" thickness where we are, which is why we called them "thick." Thank you!
