Cucumber Mint Iced Tea

When I was a child, I did not like iced tea. At all.  As a grown-up, I have gradually learned to love iced tea and its goodness. I am sharing with you one of the greats: cucumber mint iced tea.

One of my favorite treats is the water that the spa I go to serves us while waiting. It is cucumber and mint, and so refreshing that I probably drink more than my fair share when I go.  I knew that combining this refreshing drink into another refreshing drink: iced tea, would result in the ultimate of summer drinks!

Iced teas are served all over the world. I am crazy about iced chai tea, and it is another summer drink I look forward to. That creamy goodness is almost as good as ice cream!  The first printed recipes for iced tea appear in the 1870s (Wikipedia) and it looks like it was as popular then as it is now. Iced tea is so popular that the iced tea spoon made its appearance around the time of the St. Louis World's Fair. The tall handle made it perfect for stirring in additional sugar, if needed.

Iced tea is a versatile beverage, available in a range of flavors and often infused with fruits, herbs, or spices to enhance its complexity. Its enduring popularity and rich history make it a beloved choice for tea lovers, who are enjoying this refreshing drink for years to come.

Anyone else in love with this vintage pitcher? It belonged to my mother-in-law and when she moved from her home, I was happy to give it a new home with me. I believe it is Anchor Hocking but I can't find anything quite like it online to confirm that.

Cucumber Mint Iced Tea

A refreshing drink inspired by the delicious spa water at Riversong Spa, Jefferson City, MO.

  • 6-8 regular sized tea bags, more if you like your tea darker
  • 1 cup sugar
  • 1 cup water
  • 1 cucumber sliced into 1/8 inch slices
  • 2 full springs of mint


How to cook Cucumber Mint Iced Tea

  1. Place the tea bags in a pitcher of water and set outside for 1-4 hours. The longer time will result in a deeper tea flavor.
  2. Boil the water and sugar together until the sugar is dissolved. 
  3. Let cool completely. 
  4. Slice the cucumber in 1/8 inch slices.
  5. When the tea is done, muddle the cucumbers and mint with a little sugar and drop into the tea.  
  6. Let rest for 15 minutes.
  7. Fill a glass with ice.  Insert a few cucumber slices and a sprig of mint. 
  8. Pour tea into glass, sweeten with simple syrup.


You can make the simple syrup up to a week in advance. The nutritional information below does not include any simple syrup in the tea.
