Campfire Potatoes

When my daughter was a tiny girl, we took her camping and she loved it!  She loved playing on the playgrounds and sleeping between her dad and me at night. Oh, and she LOVED the foil-wrapped banana boats we'd make!  I loved making Campfire Potatoes as one of our side dishes. The potatoes would cook while the meat was roasting and the delicious smells that came from our campfire were amazing.


Nowadays we cheat and throw these potatoes into the oven, but we still love them so much.  We love them when we cook steak or hamburgers. These potatoes are that versatile.  Plus, you can doctor them up after cooking as much as you want.  I've added sour cream, cheese, and bacon for Loaded Campfire Potatoes, too!

I don't hear a lot of people camping these days and I feel like it is something we are losing as a nation.  We have the most beautiful national parks in the world, and we can enjoy them for almost nothing.  My grandparents liked to visit the parks and we got the bug, too.  Eventually they got a place on the Grand River and we spent our summers fishing, flower picking and eating really, really well.

Campfire Potatoes

A fun way to make your side dish, even if you aren't camping!
prep time: 8 Mcook time: 20 Mtotal time: 28 M

ingredients:

  • 1 lb small potatoes, cut into fourths
  • 2 T butter
  • salt and pepper
  • 2 T chopped garlic
  • 1 t freshly chopped rosemary
  • 1 t freshly chopped thyme
  • 2 pieces of foil 20" square

instructions:

How to cook Campfire Potatoes

  1. Preheat oven to 350.
  2. Lay the foil squares on your work surface.
  3. Place half of the quartered potatoes on each square.
  4. Top with 1 T of butter on each square.
  5. Salt and pepper.
  6. Sprinkle on herbs.
  7. Fold foil so that the open ends are on top.
  8. Bake for 15 minutes.  Check for doneness, cook for 5 minutes more if needed.

But my favorite part was your old camping photos! LOVE!! My husband's family loves to go camping so we will have to make these next time I go with them!

  4. We make similar potatoes for camping and when we'd have fires in the backyard when I lived at home. They are delicious!! We just took our twins camping for the first time this summer (it was shortly before they turned 3) and they loved it. We had such a great time and want to make it a family tradition for sure. My husband and I used to go more!

  10. These sound delicious and I love the story that goes with it. I never camped as a child, except for Girl Scout camp in cabins. My mom refused to camp because she said it wasn't a vacation for her! I think she passed that gene on to me, ha ha.
