Grilled Flounder Tacos with Peach Jalapeno Salsa

Seriously delicious grilled fish tacos here that are simple to make using ingredients found in the deli section of your grocery store:  deli slaw, mango salsa, and a creamy avocado dressing! Perfectly seasoned fish is grilled on the grill and wrapped in a warm tortilla.




You can use fresh or frozen fish.  We used frozen flounder filets that we thawed in the refrigerator.  The grill was heated to high.  This makes a delicious weekday meal using the shortcuts we mentioned above. Don't worry if you don't have a grill.  You can panfry this fish in a little oil and it is equally delicious.





For a side dish, my family loves this Mexican Street Corn dish with their fish tacos.  Often we will just have extra coleslaw on the side.

A quick and easy meal using deli counter shortcuts

Ingredients

  • 1 lb frozen flounder filets
  • 1 c prepared deli slaw
  • 1/2 c prepared deli mango salsa
  • 1/4 c cilantro avocado dressing
  • 1/4 c taco-style seasoning
  • 4 flour taco-sized tortillas

Instructions

  1. Thaw fish in refrigerator.
  2. Preheat grill to the high setting.
  3. Sprinkle taco seasoning on fish, set aside.
  4. Spray grill pan with cooking spray.
  5. Add fish, cook on grill until opaque and cooked through.
  6. Heat the tortillas in microwave between layers of damp paper towels for 20 seconds.
  7. Separate tortillas.  In each one add 1/4 of the grilled fish, 1/4 c slaw, 1/4 c salsa and a splash of avocado dressing.
