It's Blueberry Time!

Our farm coop had fresh blueberries this week. I love them on cereal and oatmeal but wanted to do a sweet treat with them. I made this so simple cobbler that turned out great!

For the filling I used 4 cups frozen blueberries, 1/2 c sugar, a T of cornstarch, the juice of 1/2 lemon and a sprinkle of salt. I tossed these together and dished them out into individual ramekins.

For the topping I used 1/2 c flour, 1/2 c oats, some baking powder (1/2 t). 3 T sugar and 6 T of butter, softened. I blended this all together with my fingers and placed a dollop on each of the filled ramekins.

I baked them for 30 minutes, checking for heat, then let them set 30 minutes to develop the syrup. Serve with your favorite ice cream. That's summer goodness!
