Garden Salad with Lemon Vinaigrette #fantasticalfoodfight

My Salad Bowl is ready for picking and my first salad comes just in time for May's Fantastical Food Fight! Our Fantastical Food Fight bloggers follow a theme each month and hope to be the recipe that is clicked on the most often! 




I love my salad bowl that I can go out and pick fresh for lunch and dinner.  My herbs are doing wonderfully well and I added them to this yummy recipe as well.  My favorite dressing for the summer salad is my Lemon Vinaigrette dressing that only requires a few simple ingredients.  So here is what I put together for today:

Garden Salad



8 leaves of Boston Bibb lettuce
handful of spinach
2 leaves of swiss chard
1 stem of dill
3 basil leaves
1 sprig of lemon thyme
4 pods of spring peas
3-4 chive blossoms

Lemon Vinaigrette

1/4 c olive oil
juice of one lemon
1 t honey
chopped lemon thyme and dill

Wash the lettuce thoroughly.  Dry with paper towels.  Tear into bite sized pieces.  Remove the peas from their pods.  Chop herbs.  Make vinaigrette by measuring olive oil, lemon juice and honey into a glass jar with a lid.  Add herbs.  Shake thoroughly.  Arrange lettuce on a plate, add herbs, chive blossoms and peas.  Drizzle with vinaigrette.  Serve immediately.
