No Churn Banana Ice Cream

When I was thinking about what recipe to make here, I was also trying to think of a nice dessert to serve to some friends who were visiting.  I wanted something small but delicious.  I had made no churn ice cream this summer and I decided to do it this time with some smashed bananas.  It turned out amazing!

When you make this ice cream, you are incorporating the air from the mixing you do whipping the cream.  So make sure you get stiff peaks but don't whip it into butter!  Fold the sweetened condensed milk into the cream, being careful not to stir hard or you will deflate the whipped cream.  When you fold the bananas in, all you have to do is distribute the banana throughout the mixture.

After you pour it into the loaf pan, freeze it immediately.  When you get it out to serve, let it sit on the counter about 5 minutes for easy serving!

No Churn Banana Ice Cream

prep time: 15 minscook time: 4 hourtotal time: 4 hours and 15 mins
This delicious no churn ice cream is perfect for sharing with guests. Make it the night before and dessert is ready!

ingredients:

2 ripe bananas, mashed
2 c heavy whipping cream
1 can sweetened condensed milk

instructions:

Whip the cream until stiff peaks form.  Fold in the whole can of milk.  Fold in mashed bananas.  Pour into a metal loaf pan.  Freeze overnight.  

NOTES:

Using a metal pan helps the mixture freeze quickly.
