Banana Split No Bake Ice Box Cake

I love making No Bake Ice Box Cakes. They are truly so simple and so tasty for the summer!  There are endless varieties, too, which is always fun. They are a perfect dish to bring to that summer picnic or BBQ, too.



Icebox cakes became popular during the 20s and 30s about the same time as trifles and charlotte russe. The dessert was originally made with chocolate wafers and whipped cream and has evolved to graham crackers and pudding. Layering these products produces a delicious dessert.  It was one of the first "back-of-box recipes" featured by the products in the cake.

I modified a recipe I found at Spend With Pennies .  I modified because I wanted a smaller cake, and two, I wanted to create a less sugar version of the one on the blog.  Let's see how to make this delicious cake.

Banana Split No Bake Ice Box Cake

A No-Bake dessert that is easy and delicious.
prep time: 25 Mcook time: 6 hourtotal time: 6 H & 25 M

ingredients:

  • 12 whole graham crackers
  • 1 container of Cool Whip Lite
  • 1 15 oz can of pineapple, drained
  • 6 maraschino cherries
  • 1/4 c chocolate syrup
  • 4 oz cream cheese
  • 1 c powdered sugar (or allulose, to keep the carbs down)
  • 1 pkg sugar-free pudding, either banana (if you buy from me, I get a commission! )or vanilla
  • 2 c milk
  • 2 medium ripe bananas
  • 1/2 c chopped nuts

instructions:

How to cook Banana Split No Bake Ice Box Cake

  1. Prepare pudding with milk and let set.
  2. Beat softened cream cheese with 1 c powdered sugar until light and fluffy.
  3. Beat the pudding and cream cheese mixture together.
  4. Fold in half of the lite cool whip.  Set aside
  5. Drain pineapple, save juice.
  6. Slice bananas and drizzle them with the pineapple juice.
  7. Drain and dry 6 marachino cherries.
  8. Place a single layer of graham crackers in a 9 by 9 inch pan.
  9. Place half of the cream cheese mixture on top of the crackers.
  10. Spread pineapple on top of the cream cheese.
  11. Add a layer of graham crackers again.
  12. Spread the remaining cream cheese mixture on top of the crackers.
  13. Add bananas to the top of the cream cheese.
  14. Add another layer of graham crackers.
  15. Spread the remaining Cool Whip on top of the crackers.
  16. Refrigerate overnight.
  17. Cut into six pieces.
  18. Top with a maraschino cherry and a drizzle of chocolate syrup.
