Vanilla Bourbon Bacon Cupcakes

Happy National Cupcake Day! What better way to celebrate but to toast the day with a vanilla cupcake enhanced with bourbon and bacon?  I don't think there is so here we go!


Cupcakes have been around for a long long while. The first mention of a cake in a cup was in 1796 (Wikipedia) when the small cake was baked in a pottery style dish. The small cakes were individual sized servings.  I image they were topped with sparkly sugar to make them extra special.

Today we are blessed with the wonderful muffin tin to bake our cupcakes in and a wonderful variety of cupcake papers to make them match the occasion.  I have given you links to some of my favorites at Amazon. Vanilla Bourbon Bacon Cupcake

A delicious cupcake for any holiday, or any day that has bourbon.
prep time: 20 Mcook time: 20 Mtotal time: 40 M

ingredients:

For the cake
  • 1 cake mix, vanilla
  • 1 T good vanilla
  • 2 T bourbon
  • 2 T vegetable oil
  • 2 T bacon fat
  • 2 whole eggs
  • 1 c milk
  • 4 slices of crisp bacon, cut into fourths
For the frosting
  • 1 tub cream cheese frosting
  • 2 T bourbon

instructions:

How to cook Vanilla Bourbon Bacon Cupcake

  1. Preheat oven to 350.
  2. Line cupcake pans with cupcake papers.
  3. Fry bacon, reserve grease.  Cool.
  4. Beat together cake mix, eggs, bourbon, oil, fat, vanilla, and milk.
  5. Beat for 3 minutes.
  6. Fill cupcake papers 2/3 full.
  7. Bake for 15-20 minutes, or until a toothpick inserted in the middle of a cupcake comes out clean.
  8. Cool cupcakes completely.
For the frosting
  1. Scoop frosting into a small bowl.
  2. Add bourbon and stir until incorporated.
  3. Microwave frosting until melted, but still thick.
  4. Dip the cooled cupcakes into the frosting.
  5. Let set, dip a second time if desired.
  6. Dip an edge of the bacon into the frosting and insert on top of the cupcake.

NOTES:

Cupcakes have to be completely cooled or the frosting melts and runs off the cupcake.
I fill my cupcakes a little less than 2/3 full as I like a flat surface to decorate on.

    I ended up just making the cupcakes, not the icing, and they were delish!! I made a fluffy buttercream icing with bourbon candied bacon on top and everyone loved them! Going to make them again tomorrow for my dads birthday now. Thanks for sharing!!
