I love that someone in this world recognized that we needed a Chocolate Cake Day!  Early on in our American history, chocolate was consumed as a drink.  The first chocolate cake recipe appeared in 1847 and Betty Crocker blessed us with her chocolate cake mix in 1947.  What a delightful history!

If you would like to try your own hand at making a chocolate cake mix, you need to try this one! I keep a few on hand for those moments when you want to make a homemade cake but are a bit short of time. It is delicious!  I made these chocolate cupcakes with the cake mix, too!

Sometimes you don't want a whole cake in the house. For me, that is courting disaster!  That's when this delicious Chocolate Mug Cake Keto Style steps up and says, howdy!  It satisfies your sweet tooth and there aren't leftovers to tempt you into another slice!

Chocolate Mug Cake Keto Style

A rich and chocolately mug cake for those following the keto lifestyle!
prep time: 4 minscook time: 1 minstotal time: 5 mins

ingredients:

  • 1 T almond flour
  • 1 T gluten-free baking mix
  • 1 T cocoa powder
  • 1 T Ketosweet
  • 1/4 t baking powder
  • 1 T mayonnaise
  • 1 egg yolk
  • 2 t water

instructions

  1. In a large measuring cup, whisk almond flour, baking mix, cocoa powder, Ketosweet, and baking powder together.  Stir in the mayonnaise, egg yolk and water.  Pour into an 8 oz mug.  Microwave for 1 minute.  Check for doneness.  Microwave in 15-second intervals until the top of the cake is done.  Serve warm, with a pat of butter on top, sprinkled powdered KetoSweet or a spoonful of sugar-free jam spread across the top!
