Apple Cake with Vanilla Bean Sauce #backtoschooltreats

I hope you have enjoyed #BackToSchoolTreats Week!  So many wonderful ideas and recipes for treats for your after school needs.  I love this apple cake as you can make it advance, portion control the servings and add the topping straight from the fridge.  Good stuff.


The apple cake is made with some of my favorite brands, Taylor & Colledge Vanilla Paste and  Flahavan's Oatmeal. I'm excited to share this recipe with you.  This cake is great cold or warm. The vanilla sauce is good warm or cold. Think of the combinations you can make!  Try dusting it with powdered sugar, or swiping peanut butter across the top when it is warm. Oh, my.

This makes nine pieces that can be portioned out and put in the refrigerator for an instant snack. Pop in the microwave for about 30 seconds to make it warm, if you desire.  This is good served a la mode (with ice cream.)

It's also great made with applesauce.  Replace the chopped apple with 1 c applesauce. Unsweetened is the best. Only use the milk if needed to make a batter.

Apple Cake with Vanilla Bean Sauce

Delicious cake made with fresh apples, oatmeal, and brown sugar, topped with a vanilla bean sauce that you add before eating.
prep time: 20 Mcook time: 35 Mtotal time: 55 M

ingredients:

Cake
  • 1 egg
  • 2/3 c vegetable oil
  • 3.4 c sugar
  • 1/4 c packed brown sugar
  • 1 t vanilla paste
  • 1 c flour
  • 3/4 t baking soda
  • 1 t cinnamon
  • 1 c oatmeal
  • 1 c peeled chopped, apple
  • 2 T milk
For the sauce
  • 3/4 cup water
  • 1/2 cup sugar (granulated)
  • 2 tablespoons cornstarch
  • 2 tablespoons butter
  • Optional: 1/4 cup heavy cream
  • 2 teaspoons vanilla extract
  • Pinch of salt

How to cook Apple Cake with Vanilla Bean Sauce

For the cake
  1. Preheat oven to 350.  Prepare an 8 x 8 inch pan by coating the inside sides and bottom with shortening, baking spray or butter.
  2. Combine dry ingredients: flour, baking soda, cinnamon.
  3. Beat egg, sugar and vanilla.
  4. Combine wet ingredients to dry ingredients. Stir well.
  5. Add oatmeal and apple. Stir well. Add milk if needed to make a batter.
  6. Pour into prepared 8 x 8 in pan and bake for 30-35 minutes.
  7. Cool completely.
  8. Cut into nine squares.
For the sauce
  1. Combine sugar and cornstarch.
  2. Bring water to boiling.
  3. Add cornstarch mixture to water and stir until incorporated.
  4. Reduce heat and stir until thickened.
  5. Add cream and stir well.
  6. Remove from the heat and stir in butter, vanilla paste and salt.
  7. Whisk until butter is fully melted and incorporated.

NOTES:

Add cream or water if sauce is too thick.
