Mango Watermelon Salad

It is this time of year, in the dog days of summer, when I tire of the usual potluck dish that I have made all summer. That's when I switch to this refreshing salad, at the peak of watermelon season.  It is easy to make and can be made the day before, saving you time before the party.



This salad is the perfect combination of sweet and tart, the juice of the lime counters the sweet of the fruit in a beautiful way. I love cilantro, but you can use basil, thyme or sage and have a beautiful salad, too.  It's the perfect side dish to grilled meats.


Mangoes are the featured stone fruit here.  Mangoes are the most common fruit around the world, with India being the major supplier. California and Florida are major mango suppliers, too. One should be a bit cautious with mangoes, as the skin contains the same irritant at poison ivy.  Skin the fruit to avoid the irritant.

Mangoes provide 76% of your daily needed Vitamin C.  It has healthy levels of Vitamin A and B6.  One cup will supply you all this goodness!

Mango Watermelon Salad

Cool and crisp salad with the gentle flavors of watermelon and mangoes.
prep time: 15 Mcook time: 30 Mtotal time: 45 M

ingredients:

  • 1 small round watermelon, cubed
  • 2 medium mangos, pitted, peeled and cubed
  • 1/4 c freshly chopped cilantro
  • 1/4 lime juice
  • 1 T water
  • 1 T honey

instructions:

How to cook Mango Watermelon Salad

  1. Put watermelon and mango in a large bowl.
  2. Whisk together the lime juice, honey and water.
  3. Pour dressing over fruit and gently toss.
  4. Sprinkle on cilantro.
  5. Let flavors mingle in refrigerator for 30 minutes.

  2. I have to admit I love mangos but do not always see them and sometimes a little pricy. That salad sounds so good I have to try it before the summer is over and watermelon is not in season.

  7. I wish that I enjoyed mango but it wasn't what I expected when I tried it. However, I wouldn't mind substituting the mango for kiwi or strawberries, or combo of fruits with the watermelon. I love eating fresh fruit during the summer time.
