I have to admit, when I decided to make these pumpkin bars, I knew I wasn't going to start with a spice cake mix.  Why?  Because I have a long history of not being to find a spice mix when I want to make these bars. Instead, these pumpkin bars start with an easy-to-find yellow cake mix.  From there I add my own delicious spices to get the flavor I want!


Since these do start with a cake mix, I am able to control the sugars in them by choosing a sugar-free mix if I want. Sometimes I do, and sometimes I don't.  The ones I made this week are with a regular cake mix. Still, they are not too sweet, which brings out the pumpkin flavor!

For fun, I love to sprinkle on a few of the wonderful sprinkle creations of Sweet & Treat. They know their sprinkles!

Pumpkin and Cream Cheese Swirl Bars

Easy pumpkin bars made with a cake mix. Delicious and not-too-sweet!
prep time: 20 Mcook time: 30 Mtotal time: 50 M

ingredients:

  • 1 yellow cake mix
  • 1 t Penzey's cake spice
  • 2 t pumpkin pie spice
  • 1 15 oz can of pumpkin
  • 1 c chopped candied pecans
The Swirl
  • 1 oz block of cream cheese, softened
  • 1 t vanilla
  • 1 egg
  • 1/4 t pumpkin pie spice
  • 2 T powdered sugar
 Sprinkles

instructions:

How to cook Pumpkin and Cream Cheese Swirl Bars

  1. Preheat oven to 350.
  2. Line 9 by 13 pan with parchment.
  3. Beat cake mix, pumpkin, and spices until well incorporated.
  4. Add 3/4 of the pecans and mix well.
  5. Pour 2/3 of the batter into the pan. Batter will be thick.
  6. Beat cream cheese, vanilla, sugar, egg, and spice until well incorporated.
  7. Scoop cream cheese using a melon baller and place in random spots over the pumpkin batter.
  8. Pour the remaining batter on top of the cream cheese and cover the cream cheese.
  9. Sprinkle the remaining pecans on top of the batter.
  10. Bake 30 minutes. Knife inserted in the center should come out clean.
  11. Cool.
  12. Cut into bars.

NOTES:

Pecans can be left out or replaced with walnuts. I typically reduce the overall amount of walnuts to 3/4 c.
