We believe in flavor for all and opportunity for all. In the beginning, Rinaldo and Ezilda Torre visited family in Lucca, Italy. They returned home to San Francisco with handwritten recipes, which they used to create authentic flavored syrups. Needless to say, the syrups we’re a hit. A lot has happened since then, but our belief has remained the same: Flavor for All, Opportunity for All. It means that not only are the products we make inclusive and approachable, but so is our success. We believe everything starts with people, and the only way to truly succeed is to succeed together. Today, you can use more than 100 of our naturally flavored syrups, sauces and beverage bases in coffees, sodas, teas, smoothies, cocktails and more.

Cabot is giving one winner a gift box of assorted Cabot cheeses.

The farm families that own Cabot Creamery Co-operative love what they do. And they’ve been doing it for a long time—every single day since 1919. Almost 100 years later, we’re proud of our thriving farms, strong communities, and happy, healthy cows that produce the rich, buttery milk that we use to make Cabot’s award-winning cheese and dairy products. We like to think those awards mean we’re doing something right. Of course, you’re a big part of this too. If you love eating our cheese as much as we love making it, then we’ll get to keep doing what we do for generations to come.

Thank you to #PumpkinWeek Sponsors: Dixie Crystals, Sweets & Treats, Torani, and Cabot Creamery Co-operative for providing the prizes free of charge. These companies also provided the bloggers with samples and product to use for #PumpkinWeek recipes. All opinions are my own. The #PumpkinWeek giveaway is open to U.S. residents, age 18 & up. All entries for the winner will be checked and verified. By entering you give the right to use your name and likeness. The number of entries received determines the odds of winning.

Four (4) winners will be selected. The prize packages will be sent directly from the giveaway sponsors. Today I am sharing with you Pumpkin and Sausage Tacos. I love adding squashes to our tacos. So many of the fall squashes can hold up nicely in tacos. Pumpkin is easy to roast plus it will last in the refrigerator, so you can make it in advance. That means dinner will come together in a short amount of time! I know sometimes I need a quick dinner that is wholesome. This one fits the bill.

With leftovers, when there are some, I use the sausage mixture in scrambled eggs. It is so good, and delicious in a whole new way!

Yield: 8

Pumpkin and Sausage Tacos

Delicious tacos made with roasted pumpkin.
prep time: 20 Mcook time: 1 hourtotal time: 1 H & 20 M

  • 1 pie pumpkin (small, about 6-8")
  • olive oil
  • salt and pepper
  • 1 lb sausage, mild
  • 1 small onion chopped
  • 1 T tajin
  • 1 small green pepper, chopped
  • 1 c roasted pumpkin cubes
  • 1 c shredded cheese (I use Cabot)
  • 8 tortillas
  • avocado
  • red onion
  • sour cream
  • cilantro
  • 1 lime cut into four wedges

How to cook Pumpkin and Sausage Tacos

Roasting the Pumpkin
  1. This is a step you can do on the weekend to be ready for when you want to make the tacos.
  2. Preheat oven to 350 and line a cookie sheet with parchment or a silicone liner.
  3. Wash the outside of the pumpkin
  4. Cut in half, then into fourths.
  5. Clean out the seeds and throw away.
  6. Drizzle on olive oil.
  7. Salt and pepper the quarters.
  8. Place on cookie sheet.
  9. Roast for 30 minutes. Flesh should be firm but also a knife should be able to go cleanly into the pumpkin.
  10. Remove from oven.
  11. Cool.
  12. Slice off pumpkin skin.
  13. Chop into cubes.
  14. Refrigerate until ready to use.
Prepare the filling
  1. Crumble sausage into a large frying pan.
  2. Cook until sausage is slightly pink.
  3. Add onions and green peppers.
  4. Sprinkle on tajin.
  5. Cook until vegetables are softened.
  6. Add in 1 cup of the roasted pumpkin (more if you like!)
  7. Cook until pumpkin is heated through.
  8. Heat tortillas.
  9. Scoop filling onto tortillas.
  10. Add avocado, cilantro, cheese, sour cream, lime, red onion.

The cooking times include roasting the pumpkin.
