One Pot Lasagne Soup

For National Pasta Month I thought I would make for you a warm and delicious, One-Pot Lasagne Soup.  It's a perfect weeknight dinner, as it is fast and delicious, with all the yummy coziness of lasagne. Served with a crusty loaf of fresh bread and a salad, and this is one delicious meal!




Some tips for making this soup:

1.  Use spicy Italian sausage to get some heat in the bowl!

2.  Add chopped basil at the end as a garnish.

3.  Serve with a simply dressed lettuce salad and crusty bread.

4.  Parmesan flakes instead of shredded parmesan is elegant and tasty.

5.  Use any noodle shape you have!

6.  Add a bit of heavy cream to make it even more decadent!

7.  In a pinch you can use vegetable or beef stock.

8.  This recipe doubles well for a larger crowd.

9.  This can be made in the crockpot, but I suggest you brown the meat first and add the noodles during the last 20 minutes or so of cooking.  

10.  You can freeze this soup but the noodles can get a little mushy.

One Pot Lasagne Soup

An easy dish with all the flavors of lasagne, made in less time!

Ingredients

  • 1 pound Italian sausage
  • 1/2 cup diced yellow onion
  • 32 ounces chicken broth
  • 2 cans diced tomatoes
  • 2 tablespoons Italian seasonings
  • 6 broken lasagne noodles
  • 1.2 c grated parmesan cheese
  • 1 cup ricotta cheese

Instructions

  1. In a Dutch oven, brown the sausage and onion until the onion is tender. Drain.
  2. Add chicken broth, tomatoes, seasonings, and lasagne noodles.
  3. Cover and cook 10 minutes.
  4. Serve in large bowls with crusty bread, a dollop of ricotta cheese and parmesan cheese.
  5. *Add chopped basil as an additional garnish
