Three Ingredient Pumpkin Cookies #halloweentreatsweek

These pumpkin cookies are the perfect treat for Halloween.  Full of pumpkin goodness, these cookies aren't too sweet and perfect with a cup of hot cocoa.  They are easy to make and only have three ingredients.  I've added my favorite baking tips below.


Baking Tips for Three Ingredient Pumpkin Cookies


1.  Mix these by hand for easy clean-up.

2.  Use a silicone sheet for the best cookie shape.

3.  Add a tablespoon of pumpkin pie spice for a bit more flavor.

4.  Let cookies rest at least five minutes before removing them from the cookie sheet.

5.  Make a stem from M & Ms or a pretzel rod.

6.  A few chocolate chips pressed into the cookies won't hurt anything!

7.  Dip the unbaked, flattened cookies into sugar for a sparkly finish.

Three Ingredient Pumpkin Cookies

Easy recipe, not-too-sweet, and makes just enough.

Ingredients

  • 1/3 c pumpkin puree
  • 1/4 c sugar
  • 1 1/3 c flour

Instructions

  1. Preheat oven to 350.  Line a baking sheet with parchment or silicone.
  2. Mix all ingredients in a bowl.
  3. Using a 1 tablespoon scoop, scoop out a ball of dough, roll it in your hands and flatten it with your palm.
  4. Place the flattened cookies on the lined cookie sheet.
  5. Bake for 15-17 minutes or until light brown.
  6. Remove from oven and cool on cookie sheet for 5 minutes.
