A Chilean Pinot Noir with Seafood Stuffed Atlantic Salmon #worldwinetravel

The Spanish conquistadors brought Vitis vinifera vines with them when they colonized the region. These vineyards, along with the natural climate and geographical areas, create the perfect environment for growing grapes without pesticides.




Veramonte, the vineyard I paired my salmon dish with, follows organic practices throughout their estate. These wines have been proclaimed as sustainable.

The Veramonte Pinot Noir critical acclaim by James Suckling with a score of 91 and these wine-tasting notes:  Fresh, delicate, and silky. Expressive aromas of raspberries, red cherries, and strawberries. A delicate and fresh wine with balanced tannins and a silky mouthfeel.





We paired this wine with Seafood Stuffed Atlantic Salmon Filets that we grab from the seafood counter at our local Schnucks store. We discovered these by accident and they have appeared on our menus a couple of times a month.  They are delicious and fast to make.  Paired with green vegetables and some mushrooms from the Farmer's Market, you have a delicious meal.  The fruit of the wine pairs delightfully with the salmon, with soft tannins and that silky mouthfeel.  This makes for an economical dinner as well, as the salmon fillets are $6 each, and the wine is around $11 a bottle.
