Sometimes you want to make a fancy dessert but you just don’t have the time!

I love a beautiful dessert as much as anyone, but there are days when separating eggs, making multiple fillings, piping frosting, and washing half the dishes in the kitchen simply isn’t going to happen. That doesn’t mean dessert has to come from a bakery box. This Busy Woman’s Pound Cake is exactly the kind of recipe I love for those days.


It is simple, dependable, and pretty enough to put right in the center of the table. The cake has that lovely golden exterior and tender, buttery interior we expect from a homemade pound cake, but the real magic happens after it comes out of the oven. A generous layer of whipped cream and a pile of fresh strawberries turn an everyday cake into something that looks positively celebratory.

Why I Call It a Busy Woman’s Pound Cake

Over the years, I’ve learned that having a few reliable recipes in your back pocket is far more useful than having dozens of complicated ones you rarely make. This is one of those recipes.

A busy woman’s recipe doesn’t mean we don’t enjoy cooking or baking. It simply means we know where our time is best spent. I want the pleasure of putting a homemade dessert on the table without devoting an entire afternoon to making it.

This cake is perfect for spring and summer entertaining, a family dinner, a garden gathering, a book club, or one of those evenings when you suddenly decide that dinner needs dessert.

Busy Woman’s Pound Cake

Prep Time: 10 minutes
Bake Time: 45 to 55 minutes
Servings: 8 to 10

Ingredients

1 cup butter, softened

1 1/2 cups granulated sugar

4 large eggs, room temperature

2 teaspoons vanilla extract

2 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon salt

1/2 cup whole milk

For serving:

Fresh strawberries, sliced or halved

Whipped cream

Powdered sugar, optional

How to Make It

Preheat the oven to 350°F. Grease and flour a 9-inch round cake pan or line the bottom with parchment paper.

In a large mixing bowl, beat the softened butter and sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla.

In a separate bowl, whisk together the flour, baking powder, and salt. Add the dry ingredients to the butter mixture alternately with the milk, beginning and ending with the flour mixture. Mix only until everything is combined.

Spread the batter evenly into your prepared pan. Bake for approximately 45 to 55 minutes, or until the top is golden brown and a toothpick inserted near the center comes out clean.

Allow the cake to cool in the pan for about 10 minutes before transferring it to a cooling rack. Let it cool completely before adding the whipped cream.

The Easiest Way to Make It Look Fancy

This is my favorite part.

Place the cooled pound cake on your prettiest cake stand. Spoon or spread a generous amount of whipped cream over the top. Don’t worry about making it perfectly smooth. I actually think soft swirls of whipped cream look prettier.

Then add the strawberries.

Use a combination of whole, halved, and sliced berries to give the top some height and texture. You can arrange them carefully or simply pile them on. Either way, those bright red strawberries against the white whipped cream and golden cake make a gorgeous presentation.

For an extra finishing touch, dust the whole thing lightly with powdered sugar just before serving.

Suddenly, your simple pound cake looks like it belongs in a bakery window.

Make the Strawberries Even Better

If you have an extra five minutes, macerate the strawberries before serving.

Slice about two cups of strawberries and toss them with one or two tablespoons of sugar. I also like adding a little squeeze of fresh lemon juice. Let the berries sit for about 15 to 30 minutes.

The sugar draws out the strawberry juices and creates a beautiful ruby-red syrup. Spoon some of those berries and their juice over each slice of pound cake, then add a dollop of whipped cream.

It is such a simple dessert, but it tastes like summer.

Can I Make Busy Woman’s Pound Cake Ahead?

Absolutely, and that’s another reason I love it.

Bake the cake a day ahead, allow it to cool completely, and wrap it well. Wait until shortly before serving to add the whipped cream and fresh strawberries.

You can also prepare the strawberries ahead of time and refrigerate them separately. If you’re macerating the berries, remember that they’ll become softer and juicier the longer they sit.

This makes the cake especially convenient when you’re entertaining because dessert is essentially finished before your guests arrive.

Easy Variations

Once you have the basic cake recipe, you can change the topping with the seasons.

In spring, try strawberries and whipped cream. During summer, use peaches, blueberries, blackberries, or raspberries. In fall, warm cinnamon apples would be delicious. For winter, serve slices with warm berry compote or lemon curd.

You could also add a little lemon zest or almond extract to the cake batter for a subtle change in flavor.

The cake does the dependable work. You get to have fun with everything that goes on top.

A Homemade Dessert Doesn’t Have to Be Complicated

I think sometimes we make entertaining harder than it needs to be. We see gorgeous desserts and beautifully styled tables and assume everything has to be elaborate.

It doesn’t.

There is something wonderfully welcoming about putting a homemade cake on the table, especially one covered in strawberries and clouds of whipped cream. It feels special without feeling fussy.

That’s exactly what I want from a Busy Woman’s Pound Cake.

It gives me the joy of saying, “I made dessert,” while still leaving me plenty of time to enjoy the people I’m serving it to.

And that might be my favorite kind of recipe of all.
