Summer Salads

I am all about using the freshest produce we can manage for our meals. That means using a lot of salads in the summer, with all the fresh produce we have.  My spring veggies are about to give out, the heat of June has started to pick up.  I am picking lettuces in the morning and cooling them down before we eat in order to get them crisped up.  I wash them, shake them off and put them in the refrigerator with a paper towel.  Take a look at all of these wonderful salads that will make you glad to eat fresh produce!

A reason to grow your own greens: lettuce do not pack a big nutritional punch. For the amount of fossil fuels we use to get them to the store, we surely aren't getting much nutrition from those greens. A packet of seeds, however, is not going to take a lot of fuel to get to your home.  Growing your own salad greens, saving fossil fuels and getting better nutrition should make you think about growing your own greens! I'll be sure to remind you next year when it is time to plant!
