Happy Grilled Cheese Month!

In honor of April's Grilled Cheese Month, I put together this yummy MexiGrilled Cheese that is low in Weight Watcher points but high in flavor!  My calculations have this grilled cheese at 8 Weight Watcher points using the brands shown in the photo below.

This grilled cheese has all that a good grilled cheese has to offer, melty goodness of cheese, a toasted outside, but with some goodies inside for flavor and pow!

MexiGrilled Cheese

Weight Watchers MexiGrilled Cheese

Prep Time: 5 minutes
Cook Time: 3 minutes

Ingredients (1 sandwich)
  • 2 Jalapeno cheese wedges
  • 6 pickled jalapeno slices
  • 1 red bell pepper ring
  • 1 T Bolthouse Farms Salsa Ranch Yogurt Dressing
  • 2 slices low cal bread
  • Butter Flavored cooking Spray
Preheat skillet on low. Spread one piece of bread with the cheese wedges. Layer on jalapeno slices and bell pepper ring. On the other bread, spread dressing over the entire slice. Place dressing/bread on top of the other slice of bread, dressing facing down. Spray the bread with the butter spray, sprinkle with cumin. Place sandwich sprayed side down in skillet. Spray the other side, sprinkle with cumin. Cook slowly so that the cheese has time to melt. Enjoy!
